Chilli and paprika lamb cutlet and roast pumpkin salad!!!

  

Hi everyone,
Its been a long time since I have posted : ( I am very sorry, but there was a reason for this, I just had all 4 of my wisdom teeth removed.....very sad, I am no longer a wise person hehe I recovered quite quickly from the surgery but wasn't able to cook anything or eat anything interesting for a while. I was stuck eating Vietnamese congee and soup for a week, I thought I wasn't gonna make it through this time (mentally that is)! hehe

This recipe for Chilli and paprika lamb cutlets and roasted pumpkin salad was the last meal before my surgery hehe and I must say smoked paprika is the best thing ever, make a simple rub with paprika and a few other ingredients and add that to any meat and you have yourself a delicious, effortless and tasty meal!!!

For the lamb rub: (i use the marinade below for 8 lamb cutlets)
1 tbsp of crush garlic
1 tsp of dried chilli flakes
1 tbsp of smoked paprika
1 tsp of grounded cumin 
2 tbsp of olive oil

Combine the ingredients for the rub and rub into the lamb cutlets and leave for about half an hour.
To cook, pan fry with a little olive oil on high heat for about 1-2 minutes on each side or until cooked to your liking and leave to rest for a few minutes.
For the pumpkin salad, cut 1/2 small butternut pumpkin into 2cm cubes, season with salt pepper and olive oil and roast in oven tray at 180 degrees C for about 20 minutes until soft and slightly golden.

To serve, place a handful of wash rocket leaves in the center of the plate, topped with the roasted pumpkin, a few cubes of marinade feta cheese and season with pepper. Dress with a little of the oil from the marinade feta and some balsamic vinegar. 

Finish off with 2-3 pieces of the lamb cutlets!
