2 x 85g packet of Aeroplane jelly, i used strawberry and raspberry<br />
1 large jam roll, cut into 1cm thick slices<br />
80ml of apple juice<br />
2 x 250g punnet strawberries<br />
300g of frozen mixed berries<br />
500ml of Pauls premium vanilla custard<br />
250ml of thickened cream, whipped<br />

Hi everyone!
This dish is perfect for brunch! My favorite meal during the day because it reminds me of a lazy day where I get to sleep in as much as I want and still get to enjoy a meal that is somewhat the best bits of breakfast and lunch! Two birds in one stone. That's the kind of life I enjoy :D<br />

I saw this recipe a while ago on one of Gordon Ramsay's shows. I love his style of cooking, simple and flavour packed food!! So many good recipes of his that I am yet to try. I have made this dish at least 3 times now, and it still is delicious every time. It takes less then 10 minutes to whip up. Who would have thought scramble eggs, croissants and smoked salmon would go so well together!<br />
<br />
<span style="color: #3d85c6;"><b>What you need to make a lazy Sunday breakfast for two: </b></span><br />
2 large croissants<br />
4 eggs<br />
20g of butter<br />
small bunch of chives, chopped<br />
1 tbsp of creme fraiche<br />
100g of smoked salmon slices<br />
black pepper to season<br />
Fresh garden salad to serve<br />
(you can make a simple salad dressing with lemon, olive oil and season with salt and pepper)<br />

What to do:<br />
1) Slice the croissants into about 4 pieces (rounds) and toast on a pan on low heat with some olive oil until slightly toasted on both sides.<br />
2) Meanwhile, in another pan on medium heat, break in the eggs and butter and stir until starting to clump, add creme fraiche and stir gently.<br />
3) Remove from heat when eggs are still soft and serve over toasted croissants. Top with chives and season with black pepper. Finally, top with smoked salmon and serve with some fresh garden salad.<br />

Cheesecake....who doesn't love a slice of perfectly baked cheesecake :) mmmm...<br />
<br />
I was reminded of how much I love cheesecake just the other day when I had some from Brunetti! mmmmm dear friends of mine, am I too greedy for having such a love for delicious sweets and desserts?<br />
<br />
I decided that it was time to make my first <b><span style="color: #e69138;">New York Cheesecake</span></b>! The outcome....awesome and delicious as it looks! <br />
<br />
<span style="color: #e06666;"><b>This is my simple recipe! </b></span><br />
Ingredients:<br />
350g of plain sweet biscuits, finely crushed in food processor<br />
170g of unsalted butter, melted<br />
750g of cream cheese, at room temperature<br />
1 cup of caster sugar<br />
2 tsp finely grated lemon rind<br />
1/2 tsp of vanilla extract <br />
2 tbsp plain flour<br />
4 eggs<br />
300 ml sour cream<br />
fresh strawberries for decoration<br />

Method:<br />
1) Preheat oven to 160 degrees celcius. Line the base if a 23cm springform pan with non-stick baking paper.<br />
<br />
2) Mix biscuits and melted butter in a bowl until well combined. Pressed the biscuit mix into the base and side of pan, press firmly, leaving about 1 cm at the top of the pan. Cover and chill in the fridge for about 30 minutes.<br />

3) Place cream cheese, sugar, vanilla extract and lemon rind in a large bowl and beat with electric beater until just combine. Beat in flour, and then 1 egg at a time, beating well until just combined. Stir in the sour cream until just combined.<br />
<br />
4) Pour the cream cheese mixture into the base. Place the pan on a baking tray and bake for 1 and 1/4 hours or until the centre is just slightly still wobbly. Turn off oven, with door ajar for about 2 hours. Then refrigerate for about 4 hours or overnight to chill.<br />

Nothing beats home made food, and who doesn't like<b style="color: #6aa84f;"> Apple Pie</b>, especially freshly baked, serve hot with a dollop of icecream or custard!! mmmmmm :) a great winter warmer to feed my hungry family who seems to always be starving of desserts these days...<br />
<br />
This is a simple recipe, almost anyone can make this, and as usual a crowd pleaser! Why not make this at your next gathering of family and friends! Simple food does not always mean boring food, so roll up your sleeves boys and girls, its time to roll out the pastry.<br />
<br />
<b><span style="color: #6aa84f;">Apple Pie ingredients:</span></b><br />
<br />
8 granny smith apples, cored, peeled and chopped into 2cm chunks<br />
2 tbsp caster sugar<br />
pinch of grounded cinnamon<br />
pinch of grounded cloves<br />
2 tbsp water<br />
1 tbsp of corn flour<br />
1 tsp finely grated lemon zest<br />
<br />
for Shortcrust Pastry<br />
2 cups of plain flour <br />
1/4 cup of self raising flour<br />
150g unsalted butter, chilled, cubed<br />
2 tbsp caster sugar<br />
4-5 tbsp ice water<br />
<br />
2 tbsp of jam (i used strawberry)<br />
1 egg, lightly beaten<br />
1 tbsp of sugar<br />
<br />
<b><span style="color: #6aa84f;">Method:</span></b><br />
1. To make the filling, place apples, sugar, lemon zest, cinamon, 2 tbsp of water in a small saucepan and simmer on low, stir occasionally for 8 minutes or until apples are soften.<br />

2. Remove most of the water except for about 2-3 tablespoons. Add corn flour to the cooked apple mixture and leave to cool completely.<br />
<br />
3. For the pastry, place sift both flours in a small bowl, rub butter into the flour until you get a breadcrumb like consistency. Stir in sugar, then make a well in the centre. Add almost all the water and mix, until the mixture comes together. Add more water if the dough is too dry. Gather dough together on a lightly floured surface. Press into a ball and divide into two, making one half a little bigger. Cover with plastic wrap and refrigerate for 20 minutes.<br />

4. Preheat oven to 200 degrees C. Roll out the larger piece of pastry between 2 baking paper to line the base and side of the pie plate. Line the pie plate with the pastry. Use a small sharp knife to trim away any excess pastry. Brush the jam over the base and spoon the apples into the shell. Roll out the other pastry between the baking paper until large enough to over the pie. brush with water around the rim then place the top on. Trim off any excess pastry, pinch the edges and cut a round hole or a couple of steam slits in the top.<br />
<br />
5. Re-roll the pastry the scraps and cut into leaves for decoration. Lightly brush the top with eggs, then sprinkle with sugar. Bake for 20 minutes, then reduce the oven temperature to 180 degrees and bake for another 15 to 20 minutes, or until golden.<br />
<br />
Enjoy this delicious pie with some custard and vanilla ice-cream!<br />

Finally the last part of my food adventures in Hong Kong is finally here...7 months late...i guess its better late then never right?<br />

While in Hong Kong, we had the opportunity to indulge in two of the most well known and highly rated, not to mention a must dining place for all new and old to Hong Kong, Din Tai Fung and Hu Tong.<br />

I will start with our experience at Din Tai Fung since we ate there first. Located at Silvercord, 30 Canton Road, Hong Kong, it had a simple and clean ambiance, very different from the many other local restaurants we ate whilst in Hong Kong, there was a huge selection of dumplings and main dishes, including a few dishes served with their special secret chilli sauce, which you definitely have to try!! Correct me if I'm wrong but this place currently holds one Michelin Star! Didn't know that until now :)<br />

There was about 10 of us there so we were able to order alot of different dishes to try. The price was quite high compared to food in Hong Kong, but the quality and standard of food was very good also, in comparison. Staff was friendly, though it was hard to get their attention to order anything else, after you already place the initial order, understandable since the place was super packed and busy! Overall, it was an amazing dining experience. I was very satisfied with the flavours of the food, all the dumplings were made with care, our food came out nicely presented, simple and clean, everything was so yummy and delicious!! Standout dishes would be the Xiao Long Bao, Noodles serve with Special Sauce, Prawn dumplings in special sauce!! The flavours of the special sauce were simply amazing...makes me drool just thinking about it haha and the Xiao Long Bao were absolutely perfect, the skins were the right thickness, flavours of the filling were delicious with burst of the steamy and super flavoursome soupy goodness inside, balance with the right amount of soy sauce, vinegar and finely slice ginger ....mmmmmmmmmm<br />

I will definitely return to Din Tai Fung, just for their Xiao Long Bao's and Special Sauce (of which I did on my last day in Hong Kong hehe).<br />

Hu Tong was located at level 28, One Peking Road, Hong Kong. Upon arriving at this restaurant after going up 28 levels and stepping out of the lifts, I was blown away by the beautiful interior design of the restaurant. It was beautifully traditional yet very contemporary/modern at the same time.<br />

The ambience is amazing, and the decoration and view of the city was stunning! We were lucky enough to be seated in one of the private booths, absolutely beautiful, I just love the traditional feel this place has! I haven't even started eating and already this restaurant has left me nodding and speechless in appreciation :) The service by the staff was exceptional, they were attentive, yet weren't pushy and seemed to know exactly when you needed to ask them for something. We mainly order dumplings because it was only lunch time, but there was only 5 of us this time and we were more then happy to just order dumplings to share (nope still not sick of dumplings...yet :P). The prices of dumplings were much higher then Din Tai Fung, or anywhere else we ate in Hong Kong, same price as Australian Yum Cha, in terms of quantity. The cutlery and dining ware they had were absolutely gorgeous, I wouldn't mind having these in my home. The dumplings were beautiful presented on unique plates, each one beautifully crafted! The food was of very high quality, almost fine dining like experience. Not to mention the tea we had was a very unique blend....i consider myself a tea nut and this is not one I've tried before, not the usual Jasmine or Chrysanthemum tea you get in Chinese restaurants. Flavours of the dumplings were amazing and of very high standard, and overall the dining experience was exceptional. Obviously we had to try the Xiao Long Bao also and make the comparison on this popular dumpling dish, they tasted just as good as Din Tai Fung and I couldn't decide which one I liked more hehe I was very happy that I did not miss the opportunity to try out this place before we left Hong Kong, one place I would be visiting again if I went back to Hong Kong and try out the many other main dishes they offered.<br />

To be honest I don't quite remember which dumpling is which on the menu, its been over 6 months and the menu doesn't have pictures so I just had to guess them hehe<br />

I guess you can tell which place I enjoyed more from my ratings?...hehe not really, though I rated Hu Tong's higher, I enjoyed both places almost equally and for different reasons. They both lived up to the hype and good ratings that I have read all other the internet! I couldn't ask for more in this short trip to Hong Kong. Hong Kong was an awesome way to finish off my Asia trip. In short, Hong Kong has left its mark on my taste buds, and I do hope that someday soon, I will return there to explore more of what this amazing country has to offer. If you ask me which of the two restaurants I would recommend more? I say try both :D<br />

I must admit sticky date puddings are one of my favourites desserts to eat, well besides cheesecakes, red velvet cupcakes, carrot cakes and a whole heap of Vietnamese puddings! Haha well to be honest, I just like desserts in general :D Sticky date puddings are perfect for winter, and yes even better with ice-cream on the side!<br />

The first time I had sticky date pudding, it was my boyfriend that made them for me. I am still using his recipe up to this day and its definitely a keeper, just like him! hehe <br />

Anywhos, heres my simple recipe for Sticky Date Pudding:<br />

Ingredients:<br />
1 and 1/4 cup of pitted dates, chopped<br />
1 and 1/4 cup of boiling water<br />
1 teaspoon of baking soda<br />
60g of butter, cubed<br />
3/4 cup of brown sugar<br />
2 eggs<br />
1 cup of self raising flour<br />
<br />
Butter Scotch Sauce<br />
1 cup of brown sugar<br />
3/4 cups of thick cream<br />
50g of butter<br />
1 teaspoon of vanilla essence<br />

<li>Preheat the oven to 180 degrees Celcius. Grease a 20cm round cake tin and line the base with baking paper.</li>
<li>Combine the dates, baking soda and boiling water in a bowl. Stand for 5 minutes, and blend or process the date mixture with butter, brown sugar until smooth.</li>
<li> </li>
<li>Pour mixture into a large bowl, add the eggs and flour and mix well until just combined.</li>
<li>Pour into the prepared tin and bake for 35 to 40 minutes or until cooked through. </li>
<li>Stand the pudding for 10 minutes before turning out of the tin. </li>
<li>To make butter scotch sauce, combine all ingredients for butter scotch sauce in a small pan over low heat and stir until sugar has dissolved and butter has melted.</li>
<li>Served cake warm, drizzle with sauce and icecream on the side.</li>

Enjoy your masterpiece hehe well actually it was quite simple but not to say that it was not delicious, cause it was, tasted even better the second day when I microwave a small portion to reheat...there's never enough desserts to go around in my house!! <br />

I've always use to make desserts after dinner everyday, but I don't know what has happened in the past few months but I just didn't have the drive that used to be in me. Well it has finally come back and I couldn't be more happy!<br />

Some might say "what...cheesecakes in winter...and frozen berries...you must be joking" hehe no in my house, we can eat anything for desserts, even icecreams in winter hehe<br />

This cheesecake recipe is really simple yet the finished cheesecake tastes absolutely delicious!!! One of the best cheesecakes I have ever tasted! It surprised me because it was so easy to make. I will definitely be making this recipe again and again, next time with other seasonal fruits and berries, eg. Passionfruit, strawberry, lemon...you can be really creative and use any fruits you want!<br />

Hi Guys,<br />

My sister made some Anzac biscuits to celebrate Anzac day and they turned out delicious!!! They are really easy to make and super yummy : )<br />
<br />
Here's the recipe:<br />
<br />
1 cup of plain flour<br />
1 cup of rolled oats<br />
3/4 desiccated coconut<br />
3/4 cups of brown sugar<br />
125g butter<br />
2 tbsp golden sugar<br />
1 tsp bicarbonate of soda<br />
2 tbsp water<br />
<br />
<ol>
<li>Preheat the oven to 160 degree C. Line two baking tray with non stick baking paper. Sift the flour into a large bowl. Stir in the oats, coconut and brown sugar.</li>
<li>Put the butter, golden sugar and 2 tbsp of water in a small saucepan. Stir over medium heat until melted. Stir in the bicarbonate of soda.</li>
<li>Pour the butter mixture into the flour mixture and stir until combined.</li>
<li>Roll level tablespoon of mixture into balls. Place on the trays, about 5 cm apart.</li>
<li>Press with a fork to flatten slightly. Bake for 10 minutes or until golden brown.</li>
<li>Set aside on the trays for 5 minutes and transfer to a wire rack so it cools completely.</li>

Hi everyone,<br />

<span style="color: #45818e;"><b>Hong Kong</b></span> is finally here. To end my wonderful holiday in Asia, our last stop was Hong Kong. The land of Yum Cha, shopping and the TVB series that I grew up watching. Hong Kong was somewhere my family and I have always wanted to go, it was holiday trip 6 years in the making : ) Not until my youngest sister finished year 12 last year did we finally make the family trip there! Well we've got one younger brother left who can't wait to grow up fast enough so that he could come with us on our next trip. He has only started year 7 so lets see if we could make the exception so we don't have to wait another 6 years for another family trip. hehe<br />

Anyways, first night we landed in Hong Kong...what do we eat? it was 11pm and we headed for KFC...lol <br />
I know what you are thinking...yes, it was crappy and unsatisfying but it was the closest place to our hotel that was still open besides the 7/11 and we were all starving and dead tired from the flight.<br />
<br />
Our real adventure in Hong Kong began the next morning. Hong Kong was everything we thought it to be, everything we saw in the TVB series and Hong Kong movies, the streets, the buildings, the taxis, the people, everything was there. I could cry from excitement. There was so much to do and so little time hehe<br />
<br />
Well where do I start..oh yes <b><span style="color: #b45f06;">YUM CHA </span></b>for brunch of course!!!! We didn't bother to research where was the best Yum Cha place in Hong Kong for obvious reasons...we were in Hong Kong, the land of Yum Cha, I don't think you can really go wrong hehe<br />

We went into the first restaurant we saw, the <b><span style="color: #674ea7;">Shamrock Seafood Restaurant</span></b> which offered Yum Cha up until 11am (I think). We went overboard with the amount of dumplings that we ordered LOL: )<br />
They had everything a normal Yum Cha restaurant would have in Australia, best thing was the price, at about $1-$3 AUD per dish. We were in food paradise!!! All the dishes tasted awesome but the best part would have to be it came up to about $7 per person. You can't get better then that!<br />

From then on, the food just kept getting better!<br />

Another neat little place that we spent alot of time at was <b><span style="color: #990000;">Toast Box.</span></b> Its a bakery / Cafe that serves really neat sweet and savory food!<br />

We also ate at a whole heap of local Hong Kong restaurants including all the traditional Chinese food and banquets, Hong Kong breakfast which consists of lots of variety of dishes that includes Luncheon meat (similar to spam), the occasional Mcdonalds, lots of street food and random restaurants, Yakult, 2 minutes noodles and loads of snacks from 7eleven, Milk tea and more milk tea and of course lots of bubble tea, and lots and lots of asian desserts!!<br />

Boy do I miss Hong Kong. Everyday I would hear my family complain about how much they wanted to go back! Stir in the icing sugar, and add about 1 tbsp of water into the mix, kneed gently and if dough is still dry, add a little more water.</li>
<li style="margin-bottom: 0.25em; margin-left: 0px; margin-right: 0px; margin-top: 0px; padding-bottom: 0px; padding-left: 0px; padding-right: 0px; padding-top: 0px;">Gather the dough together roll between 2 sheets of baking paper until large enough to line the base and side of pie plate. Line the plate with the pastry and trim off any excess pastry. Fork the edge and refrigerate for 15 minutes.</li>

Line the pastry shell with baking paper and pour in some baking beads or uncooked rice. Bake for 10-15 minutes, then remove the paper and beads. Return pastry to oven for another 10 minutes or until cooked through. Cool completely.</li>

Whisk in lemon juice, rind and 1 and 1/2 cups of water. Whisk over medium heat until mixture boils and thickens. Then reduce heat and cook for 1 minute. Remove from heat, then whisk in butter, and then egg yolks one at a time. Cover the surface with plastic wrap and cool. Spread the filling into the pastry shell.</li>

Beat with electric beater on high for 10 minutes, or until sugar is almost completely dissolved and the meringue is thick and glossy. Beat in the cornflour. Spread the meringue over the top of the pie, making peaks by drawing the meringue up with a knife, piling it high towards the center. Bake for 5-10 minutes or until lightly browned. Cool before serving.</li>

I hope you guys enjoy reading about my food adventures in Vietnam! I definitely miss Vietnam hehe<br />

Malaysia was the next destination on our itinerary! I have one word to describe the food in Malaysia....awesome!!! I was only there for 2 days so even though I didn't get to try street food from the street Vendors, there was plenty of delicious and cheap food around!<br />
<br />
What hit me first in Malaysia was the mugginess...it sure was humid there...the air was thick, but somehow it didn't bother me as much after being in Vietnam hehe<br />
<br />
OMG did I tell you how many different asian desserts and cakes there were...I was crying tears of joy when I saw how many variety of desserts there were...too bad we didn't have enough time or room in my stomach to try everything...oh and did I mention there was Pandan Chiffon cakes everywhere....it was food paradise for me...I'm such a sucker when it comes to asian desserts or any desserts for that matter hehe<br />

We stayed at JW Marriot, right opposite to the Pavillion Centre where there was heaps of shopping and food around. On the first day, we decided to play it safe and eat in the food court Pavillion (my stomach was still unstable from being in Vietnam lol)<br />

Its been a long while again since I last posted.<br />

The journey continues down south where we headed to Soc Trang, a small city way down south of Vietnam (about 6 hours drive from Saigon). My home town. My grandma's house is another hours drive from Soc Trang to another small town that probably doesn't exist on the map of Vietnam hehe. It is as far away from modern city as you can get, dirt roads, rice fields, and plenty of banana trees hehe yet there is one familiar sight...plenty of motorcycles.<br />

It was definitely different to Saigon and Nha Trang, but in its own way my home town was just as beautiful.<br />
<br />
While staying at my grandma's house we had plenty of fresh fruit, drinks and delicious home made food cooked by my uncles and aunties.<br />

</div>We were lucky enough to be in Vietnam at that time as my cousins were holding their wedding at the same time we were there. I've have always been told that weddings in Vietnam are huge....I only believed in when I saw it through my own eyes, the wedding spanned over 2 days, with church ceremony, tea ceremony and many other Vietnamese traditions! There were over 700 guests but heres the crazy part, there was no reception or restaurant...it was all held at my grandma's house, all 700 guests!!! There was over 70 banquet table (serving 10 people each) all spread out in my grandma's front yard, backyard and side of the house...any place possible! It was a truly amazing effort and to be honest...alot of fun!<br />

There was plenty of food and drinks! The wedding banquet consist of Deep Fried Soft Shell Crab, A PorkTerrine of some kind, Roast Chicken with special sticky rice filling, Seafood Hot Pot, Prawns in Vietnamese style caramel sauce, and Ice-cream for desserts. Overall, the food was delicious...though I must say I prefer the home cooked meals and local street food over the fancy banquets, it just feels more satisfying and comforting to eat!!! hehe<br />

Not to our surprise, there was lots of food left over so we had to eat the same thing for lunch the next day hehe<br />

On the last day in Vietnam, we drove 2 hours to a city called Can Tho, in 2 mini buses with over 40 of my family and cousins. It was a nice city, very modern after having spent 3 days in the country side hehe we were lucky enough to be able to book all 40 people onto a massive floating restaurant that served food and live entertainment while their restaurant sailed the river for a few hours!<br />

It was so much fun getting to know all my cousins in Vietnam better, how different your life is to theirs and what it would be like if my parents never came to Australia. There are not much opportunities in Vietnam for my younger cousins. We take for granted everything we have here in Australia, from fresh clean water to the quality of life and opportunities and options that we are presented with everyday.<br />

Being back to Vietnam the second time has truly changed my opinion about it...I love it.<br />
<br />
When it was time to say goodbye, it was a sad time. Everyone asked when we will return to see them again...who knows when that will be...<br />

Nha Trang, a truly beautiful city. Walk along the streets of Nha Trang for an hour and you will be amazed by how many different parts of the city you will cross....beautiful beaches, modern city life and high-rises, coconut trees, dirt roads with plenty of street vendors and their delicious home prepared meals, and of course, plenty of motorcyclists.<br />

</div><div>Nha Trang was our second stop in Vietnam. My boyfriends home town. We had four days to spend in Nha Trang, visiting families and doing some touristsie things, we had one more important thing on our minds, the food. I couldn't wait to tuck into some street vendor food hehe</div><div><br />
</div><div>First night of arrival in Nha Trang, it was a cold and wet night. It was raining heavily in Nha Trang. We were cold, tired and hungry. Our cab ride back to the hotel wasn't much better, the drivers in Vietnam drove like nutcases and used their car horns like no tomorrow. I remember thinking to myself, geez these guys need to chill and stop with all their road rage. I later learn't that the horn was not use for road rage but rather a way of communicating to other drivers, that they were approaching, or wanted to overtake.<br />
<br />
Anyways, after checking into our hotel (Spring Hotel in Nha Trang), we headed downstairs for our first meal in Nha Trang, Seafood Congee and Stir fried Seafood Noodles. Seafood is as fresh as you can get here in Nha Trang, straight from the sea to the restarants/street vendors. It was a small restaurant and we had to sit in little chairs and mini tables, but the food was warm, comforting and yummy so it didn't bother me that much.<br />

Over the next few days we ate some of the best Vietnamese food that Nha Trang had to offer. One of them was the Vietnamese Pork and Pate Bread rolls <span class="Apple-style-span" style="font-family: inherit;">(<span style="background-color: white; line-height: 19px;">Bánh mì)</span></span>. I know what you're all thinking...Bread Rolls...whats so great about them? Believe me, it had to be one of best rolls I had in a long time (we had many bread rolls from all different street Vendors, and they just kept getting better :) hehe).<br />

The bread had quite a different texture to what they have in the Vietnamese bakeries here in Australia. The outside of the bread is extremely crispy yet a little bit chewy, and the inside is extremely fluffy, whist filled with the right amount of home made pate, french mayonnaise, a variety of slices pork meats including Grilled Pork Belly and <a href="http://en.wikipedia.org/wiki/Ch%E1%BA%A3_l%E1%BB%A5a">Cha Lua</a>, coriander, spring onions, chilli and pickle carrots and their special home made sauces. Mmmmmmm just drooling now thinking about the rolls.<br />

My boyfriend's family also took us to eat at a fresh seafood restaurant along the beaches of Nha Trang called, Bo Ke. We had many different dishes to share amongst 8 people:<br />

Steamed Swimmer Crabs served with fresh herbs and salt/pepper/lemon/chilli dressing. Mmmmmm the crabs are so fresh you can taste the sea water in the crab meat.<br />

Grilled Shellfish of some kind (never ate this one before so don't really know...it was ok, a little chewy)<br />

And last but not least, Grilled Scallop served with spring onion oil (Mo Hanh). Who would have thought that something so simple can be so delicious, I will definitely be trying to make this myself some day : ) it is absolutely delicious.<br />

Another specialty dish in Nha Trang that blew us away is the Nem Nuong (Special Grilled Minced Pork). We went to a restaurant called Dang Van Quyen, which specialises in Nem Nuong. The freshly grilled pork is served with a piece of crispy rice paper roll, a piece of sour mango, a variety of fresh herbs and greens, all wrapped in rice paper roll and dipping into a secret homemade sauce.<br />

One other special dish in Nha Trang, or more particular to the central coast of Vietnam, is Mi Quang. A special noodle soup dish that I have not eaten before in Australia. The soup was full of wonderful and new flavour, the yellow noodles (either rice or egg, I couldn't quite tell) was just right, fresh herbs and greens and a variety of meats and other things inside.<br />

Its been a long while, I know, perhaps the longest time I went without putting up a post :( On the bright side, the reason I haven't posted for a long while is because I was on holidays overseas in Vietnam, Malaysia and Hong Kong!!! Woo hooo hehe well and after I got back, it was Christmas after Christmas parties, finally have some free time to myself again : )<br />

Its good to be back home in Australia. I have heaps to tell you about my trip : D One world to describe everything....AWESOME!!! Country...Awesome....Food.....Awesome....everything was awesome!!! hehe<br />

<span class="Apple-style-span" style="color: #674ea7;"><b>Vietnam</b></span> was my first destination on my three week trip. Home sweet home, where I was born, where my parents were born and grew up, and where half my relatives are still living. I haven't been back to Vietnam to visit for over 17 years, last time I was there I was still a kid and had no memories of anything else except my grandma's house in Vietnam (me and my five sisters had to stay home with our grandma while our parents were out "visiting their friends", which happened everyday for the whole month that we were in Vietnam that time :P ).<br />

My first stop in Vietnam was Saigon, or better known now as Ho Chi Minh City. The city was hot, extremely humid, over crowded with people and vehicles of all kinds. Hmmm not what I'm used to here in Australia. I must admit it was very hard to adjust to the conditions there. On arrival, we took a cab to Cho Ben Thanh, and wondered around the streets till we found a decent looking restaurant called Ton Kin for lunch. Though Vietnam is all about street food, it was our first day there and we had three weeks of traveling ahead of us, I didn't want to risk eating street food so early on in the trip hehe<br />

Overall, very delicious and satisfying...a little pricey for food in Vietnam, but I was willing to pay that little bit extra for the clean and air conditioned environment! hehe<br />

Next stop, a little Cafe near Galaxy Cinema, not too sure what it was called, but we ordered some fresh coconut juice served straight from the coconut, and some fried chicken wings served tossed in a fish sauce dressing to share. Mmmmmm....another yummy and satisfying meal.<br />

After that, it was walking around the city to explore as many parts of the city as we can for the next few hours. Overall, we spent about 6 hours in Ho Chi Minh, enough to see the city central, but not enough to truly experience the best part of Ho Chi Minh, the street food served during sun down. It was a shame, but we were scheduled to fly to Nha Trang that evening and had to go back to the airport. We got hungry whilst waiting at the airport and ate 2 minute noodles....2 minute noodles always taste better overseas hehe<br />

Sorry its been a long while since I have posted, alot is going on in my life at the moment and I haven't had the time or energy to cook for a while : ( Been eating out heaps but nowhere special, just my usual favourite local restaurants hehe<br />
<br />
During the week, I was craving for seafood and decided to make some prawn tempuras for mid week dinner. This is my first time making it. I didn't have a secret tempura recipe to follow hehe but I decided to wing it and use the same batter I use for my onion rings hehe only extra ingredient I used was Panko Breadcrumbs. I was very surprised by the outcome, it turned out better then I expected : )<br />

Heres my awesome recipe:<br />
<br />
1/2 kilo of large prawns peeled leaving tail, and deveined, I used Banana Prawns<br />
1 cup of plain flour<br />
1/2 cup of light beer<br />
1 cup of Panko breadcrumbs<br />
Salt and pepper to season<br />
Lemon wedges and Japanese Mayonnaise to serve<br />
Vegetable oil for deep frying<br />
<br />
What to do next:<br />
<br />
Mix half the plain flour together with the beer in a small bowl until batter is smooth. Lightly season with salt and pepper.<br />
<br />
Put the remaining half cup of plain flour in another small bowl, and the Panko breadcrumbs in a third bowl.<br />
<br />
Heat oil on medium heat in a small saucepan.<br />
<br />
First, dip one prawn at a time into the plain flour, second into the beer batter mix, and lastly coat plentifully in the Panko breadcrumbs. Repeat until you have coated all the prawns.<br />
<br />
Deep fry 2-3 prawns at a time in the oil, it should take no more then 2-3 minutes to cook, it should be ready when the prawns are lightly golden brown. Adjust the heat of the oil if necessary (if your prawn becomes golden too quick, turn the heat down a tad).<br />
<br />
Place cooked prawns on paper towel to absorb excess oil. Serve while hot with lemon wedges and the mayonnaise.<br />

My boyfriend took me to <b style="color: #e06666;">Cumulus In</b><b style="color: #e06666;">c</b> a few weeks ago to celebrate the earnings of his interest in his savings account. After years of my rambling nonsense about putting his savings into a free interest earning account, my boyfriend finally decided to open the account...a month later, he realised how much interest he had earnt in that one month. We decided to go to Cumulus Inc to celebrate.<br />

Situated on 45 Flinders Lane, <a href="http://cumulusinc.com.au/">Cumulus Inc</a> was a short walk from the main hustle and bustle of the cbd.<br />
<br />
The interior was very contemporary and had unique decoration. I thought it had a very warm and friendly feel. We were seated at the bar table which faced the open kitchen. Being the foodie that I am, it was an awesome experience to be able to see the chefs at work. We got to spy on what they were making, and in a way, saw our meals being prepped and cooked before our eyes!<br />

We started the night with a Slow Cooked Octopus with Aioli and Dehydrated olives (picture above). Absolutely delicious :)<br />

All the dishes were delicious, my favourites would have to be the Octopus, the Yabbies and the Lemon Tart dessert!!! <br />

Beat in eggs, one at a time. Mix in sour cream, milk, food color and vanilla. Gradually beat in flour mixture on low speed until just blended. Do not overbeat. Spoon batter into 30 paper-lined muffin cups, filling each cup 2/3 full.</div>

The last time I had one of these Chocolate Crackles, I was in primary school, where we had one of those school fairs and our parents would cook a dish for us to bring to school to sell and fundraise for the school. There would always be someone's parents who made these Chocolate Crackles and they were sold for around 20 cents. As a kid, I remember these were awesome!!<br />

Only until recently did my boyfriend eat theses again at Melba (Langham Hotel Melbourne) that it reminded me of how much I used to love these chocolate crackles.<br />
<br />
This is the recipe for the Chocolate Crackles:<br />

Ingredients<br />

4 cups Rice Bubbles</div>
<div class="p1">
1 cup icing sugar</div>
<div class="p1">
1 cup desiccated coconut</div>
<div class="p1">
250g copha, chopped</div>
<div class="p1">
3 tbsp cocoa</div>

Method</div>
<div class="p1">
In a large bowl, mix the rice bubbles, icing sugar, cocoa & coconut.</div>

Slowly melt the copha in a saucepan over a low heat.</div>

Allow to cool slightly.</div>

Add to Rice Bubbles mixture, stirring until well combined.</div>

Spoon mixture into paper patty cases and refrigerate until firm.</div>

Over the weekend I went to a friends house and we all cooked dinner together : ) we used to do this all the time when we were growing up & after we finished high school, we had a lot of spare time and was always cooking together at someone's house or another! These days, we have work commitments, some of my friends are married and a few with little bubs on the way: D<br />
<br />
So it's a lot harder to get all the gang together on the one day! The last time we cooked together was probably over two years ago! Me and my friends share the same passion for cooking and food, always exchanging recipes and chatting about the latest episodes of Masterchef or which restaurant to eat at for our next catch up!<br />
<br />
Saturday night was fun! Grocery shopping, prepping and cooking all the yummy food that we did that night, and then sitting down at the dinner table together to enjoy and savor our hardwork, not to mention everything tasted awesome!! Good job team! Hehe oh and did I mention we had a super awesome dessert also? Hehe though I was seeing my gang less often these days, it feels like things haven't changed abit when we do : ) it makes me feel happy knowing that! <br />

For the main course we had Pan Fried Lamb Cutlets in Rosemary and Butter, Beer battered chips, Twice Baked Potatoes, Rian and Tuyen's Special Potato Mash, Steamed Corn, Mixed Salad, and a Creamy Mushroom Sauce!<br />

The winner of the night would have to be the dessert! <b><span style="color: #674ea7;">The Deep Fried Icecream with Chocolate Sauce</span>!</b> Everyone was pretty full after the main meal, but for me, I always have a second stomach saved just for desserts hehe<br />

A lot of effort and hard work went into making this delicious dessert (a process of 3 days!!) so I think it would only be right that I give all the credits to my two best friends, Anna and Crystal!!! Thanks for making this super awesome dessert guys!! And with their permission, I am now gonna share with you guys how to prepare and make the best Deep Fried Icecream with Chocolate Sauce that you will ever eat!!!<br />
<br />
<b style="color: #e69138;">Ingredients:</b> (serves 4)<br />
4 large scoops vanilla ice-cream<br />
4 eggs<br />
1 madeira cake <br />
2 cups panko breadcrumbs (Japanese-style crumbs)<br />
200g dark chocolate, finely chopped<br />
250ml cream<br />
Vegetable oil, for deep-frying <br />

<br />
To make Chocolate Sauce, melt chocolate on a double boiler. Bring the cream to the boil and add to chocolate, whisk the chocolate sauce until it is smooth.<br />

Cut the cake into 8, 1/2cm slices.<br />
<br />
Lay 2 slices of cake across each other to make a cross, place 1 scoop of ice cream in the centre and using your hands to mould the cake over the icecream to form a round ball.<br />
<br />
Transfer onto a tray and place in the freezer immediately. Repeat with all the ice cream and cake.<br />
Allow the ice cream balls to freeze for at least 1 hour, but the longer you leave it the easier it is to work with when its time to coat (my friends left them overnight)<br />
<br />
Beat the egg in a shallow bowl and place the breadcrumbs onto a another plate.<br />
Working with one ball at a time, roll them into the egg and coat with breadcrumbs and then refreeze again. This time for at least 2 hours, but preferably overnight.<br />
<br />
When it is time to serve desserts, remove the balls from the freezer, stand for 5 minutes.<br />
Pour oil into a saucepan. Heat on high and it is ready when a piece of bread dropped in turns brown within 15 seconds.<br />

Deep-fry one icecream ball at a time in the oil until it is golden and crispy and drain on paper towel. This should take no longer then 10-15 seconds.<br />
